Grilled Fruit Kebabs

If you want a great and healthy alternative to the high fat desserts, you should try Grilled fruit kebabs. Ingredients that you will need are:

• 1/3 cup lime juice
• 2 cups pineapple juice
• 1/2 cup apple cider vinegar
• 3/4 cup orange juice
• Chopped mint, 2 tablespoons
• 1 ripe honeydew melon (seeded and halved)
• 1 halved and seeded cantaloupe melon
• 6 inch bamboo skewers (you must soak it in water for one hour)
• Canola oil

Put a saucepan on a high heat. Add inside orange juice, vinegar and pineapple juice. Wait until it starts boiling, then, reduce heat and simmer. You should simmer until it is reduced to ¾ cup (usually it requires 25 minutes). Pour ½ cup of that mixture into a bowl (you can use a small bowl) and wait until it cools down. Then stir in mint and lime juice. The remaining glaze should be put aside in a saucepan. Scoop out balls from the honeydew, to measure 4 cups total. You can use a melon cutter. If you don’t have it, you can cut melons into small pieces (2x1 inch). Use fruit to tread every skewer, alternate cantaloupe, honeydew and pineapple and leave ¾ inches of the skewer exposed. You must wrap this part with foil, so it prevents burning.

Heat a grill to 375°F. Oil it a bit and arrange skewers on it. Grill them until they get golden brown. You should brush fruits with a reserved glaze during the last 30 seconds. When they are done, remove foil and arrange the kebabs on serving plates. It will be enough for 6 servings. You can serve them immediately. It looks great, and it tastes even better.
